With the cyclosporiasis outbreak, many of us are feeling hesitant to eat salads or other fresh produce to avoid getting sick! One recommendation is to eat cooked vegetables instead of raw, since cooking them to an internal temperature of at least 158 degrees kills the parasite.
The challenge this week is to try one of the recipes in the buttons below that feature lots of cooked vegetables!
